Shadow Shot Sunday ~ #114 ~ My Hanging Gardens

I call these the Hanging Gardens of BlabbyOn!! When my husband started sanding our deck I had to take all my hanging planters down. He hung these up on the woodshed for me and whoa is my Early Girl tomato going gang busters!! She's the one in the middle. You can see from the top photo that I "double use" my water...When the hanging plants get watered my rhubarb and (crumby,little) sunflowers get watered 2nd hand!! I'm thinking that counts as recycling, right Suz?? I can hardly wait to get some nice, fat green tomatoes.

What Have I Been Up To?

Patrick planted my Sweetheart Cherry Tree for me two years ago. Last year the deer ate all the leaves from it & I was afraid they'd killed it. Well, it made it through the winter so I covered it with netting this summer so we wouldn't have a repeat deleafing. Hallelujah! I had my first crop of cherries and I harvested and ate all 6 of them a couple days ago!! They were yummy.
I also harvested my first crop of rhubarb last week. It was only enough for a single babycake, so I also made a pineapple upside down cake. I gave the big one to some friends who are working on their home...saved myself from it! I did polish off both of the babycakes in a few days all by my lonesome. Bad Cassie!

Yummy Green Tomato Casserole

It's that time again---green tomato time that is, so thought you might like one of my most favorite recipes. This is a re-post from November 8th, 2008. Enjoy!

If You Like Green Tomatoes...... This is a recipe I got from one of the magazines that come with the Sunday newspaper. While her tomatoes were still green on the vine my good buddy Marilyn provided me with a bunch. I probably made at least 6 of these casseroles and just about everyone who had a taste wanted the recipe. So, I’m passing this on to my blog friends so next summer you also can have a tasty, green treat! (I must add, this is way easier to make than fried green tomatoes and a whole lot less messy!)

Green Tomato Casserole

4 thick French bread slices, torn into small pieces (about 2 c.)

1 t. sugar

½ t. salt

¼ t. black pepper

4 medium green tomatoes, cut into ¼ inch slices

1 c. shredded sharp cheddar

1 T. butter

1- Preheat oven to 400F. Lightly grease 1 ½ qt. casserole, deep dish pie pan, or 4 ramekins.

2- Place bread in a food processor and pulse to a coarse texture. Combine sugar, salt and pepper in a small bowl; mix well.

3- Arrange 1/3 of the tomato slices in the bottom of pan. Sprinkle 1/3 of sugar mixture, 1/3 of the bread crumbs and 1/3 c. cheddar over tomatoes. Repeat with a second layer. For the third layer, add remaining tomatoes, sugar, bread crumbs. Dot with butter. Cover with foil.

4- Bake 1 hour. Uncover and sprinkle remaining 1/3 c. cheddar on top. Bake 5 minutes longer, or until cheese melts. Remove from oven and let stand 15 minutes before serving to allow flavors to blend. Serves 4.

Nutritional facts per serving: 280 calories, 13g fat, 12g protein, 29g carbs, 3g fiber, 750mg sodium.

These are 2 Shadow Shots that my daughter, Jessica, took. She said she has much better ones, but when I saw these on her FB photo gallery I knew they'd be just right for SSS. The top photo was taken from the upstairs at Joe Bar when her dad and I surprised her for her birthday last December. The bottom shot is of David, my son-in-law, taken at Volunteer Park. Both taken in Seattle, Washington. I think the girl has real talent, don't you?!

The Grand Finale ~ A to Z Foodies ~ The Letter Z

Zucchini is one of my favorite veggies. It is sooo versatile. It can be sliced into ribbons and used in a salad. It makes a nice creamy yellow soup. It's terrific in a stick for dipping. Zucchini nut bread is also a real treat. And zucchini can be made into a yummy dough. Here is a recipe I got from recipe trove:

Zucchini Dough

3 1/2 cups Zucchini; coarsely grated Salt; 1/3 cup Flour; 3 Eggs-lightly beaten; 2/3 cup Parmesan cheese-grated; 2 tbls. Fresh basil-(2 to 3 leaves) or 1 tsp. dried basil

Salt and pepper to taste. Place zucchini in bowl and lightly salt. Let sit for 15 minutes and squeeze out all the water that is rendered. Roll in a towel and twist again. This is to remove all possible water. Mix with rest of ingredients in a bowl. Spread on a well−oiled baking pan and bake in a 350F oven until top is dry and lightly browned (20 minutes).Remove from oven, add desired sauce, cheese, and toppings.Return to oven and bake at 350F until done, about another 20 minutes.

HELP!!!!

While preparing my post for today I decided to check out the new templates for blogger. Well, I messed up and LOST all of my sidebar info...followers, country count, etc. I'm sooo disgusted with myself. Messed around 'til 4am & could not recover it. UPDATE: I followed the advice left in the comments here and it appears that I have my sidebar back!! Not quite sure what I did, but it worked...ahhh even an idiot such as myself lucks out sometimes!! I ended up having to use the new template which I am not as happy with since none of them seem to have as much room as my old one. But, hey, I didn't loose all my good old info from the sidebar, so I'm happy.

A to Z Monday Food Stuff ~ The Letter Y

YOGURT.

I bet everyone is going to be using yogurt for the Y word, but if so, I'll just join the crowd then. I really do like yogurt. I like to eat it several times a week. While down in Phoenix I buy my favorite yogurt at Trader Joe's. The French Vanilla is just yummers. They also have the Greek yogurt. Up here in farrr N.Idaho I usually just stick to Activia. I like the Vanilla best in that too. Since it has warmed up here I always keep a few Activias in the freezer and eat it like ice cream. Then I give the container (with a bit still in it) to Baby Rocket Dog. She loves to finish it up! (Hootie isn't fond of yogurt.)
