A to Z Monday ~ Foodies Letter S

Not sure what happened, but somehow I lost a day and thought I had 2 Sundays in a row!! My entries for the letter S are Salad & Shallots. This salad photo I took in January. Pat and I eat a lot of salad...of course, we put too much dressing on this "diet food". ;>( Now shallots were new to me. I got a yummy recipe for shallots from watching Martha Stewart one day last March. I teamed the completed shallots with roasted pork loin and buttered basil pasta. Patrick declared it a success! Here is the recipe that I got from Martha Stewart.com :

Ingredients

Serves 4

10 large or 15 small shallots

1 teaspoon olive oil

1 teaspoon unsalted butter

1 teaspoon sugar

Salt and freshly ground pepper

Directions

1-Peel shallots and cut lengthwise into 1/8-inch slices. (I peeled, but did not cut into slices.)

2-Heat oil in a small saute pan over medium heat. Add the butter and shallots. Sprinkle with sugar and add salt and pepper to taste.

3-Cook shallots until they begin to brown evenly, then turn heat down to low and continue to cook until very soft, about 10 minutes. Serve at room temperature.

Monday, May 31st, is Memorial Day/Decoration Day in the USA. It is observed in commemoration of those members of the armed forces who were killed in war.
The following information about Memorial Day was taken from Answers.com:
Originally held (1868) in commemoration of soldiers killed in the American Civil War, its observance later extended to all U.S. war dead. Most states conform to the federal practice of observing it on the last Monday in May, but some retain the traditional day of celebration, May 30. National observance is marked by the placing of a wreath on the Tomb of the Unknowns in Arlington National Cemetery. A to Z Monday ~ Food related R words...

The Letter R
I don't eat pork, but I do fix it for my hubby. This is a pork loin roast getting ready to be placed in the oven. It was served with an S word, so next week I'll show the finished product on the plate...R & S side by side. Awwwwwww.
This is a bag of Bob's Red Mill Soy flour. (Once again the combination of R & S.) Don't ask me what I use this soy flour in please. I have no idea. Any suggestions??

A to Z Mondays Food Addition ~ The Letter Q

The Quintessential Q food. Yes, the letter Q food could only be one thing: Quesadilla!!
Such an easy dish to make, and yet so delish. It is so simple, that we used to make quesdadillas when we would go camping. Just a package of flour tortillas, some butter and grated cheese. We'd melt the butter on a skillet, then add the tortilla and sprinkle it with the cheese. Then flip. It was always a favorite on our camp outs. Sometimes we would go wild and add salsa and refried beans. Mmmmm good.

A to Z Monday ~ The Letter O

The letter for this week is O. This was a really easy one for me, as one of my two favorite foods in the whole world is OATMEAL. Yes, the humble oat in the form of meal has been a favorite of mine since I was a little kiddo. After my surgeries as a child when I was finally taken off of a liquid diet and put on semi-soft foods my first two requests were oatmeal and Campbell's Bean with Bacon Soup. I love all kinds of oatmeal...but never slimy! Only in the past few years have I been introduced to John McCann's steel cut oatmeal and now it's my new favorite. I usually make up a bunch of it, then freeze some for an easy breakfast. I really like oatmeal. Heck, I even like that instant oatmeal in the bag (maple & brown sugar). Yum!
Another O that is popular at our house is olive oil. I use it for most of my cooking. I love the nutty flavor that it gives food. It's supposed to be good for us too, so that doesn't hurt any either!
