These aren't the best photos, but this is the best cauliflower I have ever made or eaten!!
I can not believe how many yummy foods start with the letter C. I had to shorten my list or I'd just go on and on. Last week while we were in Prescott with our dogs we stopped for a bite at Garcia's. They serve fresh out of the oven corn chips and those babies were big. Not just big, they were huGE!
On Wednesday I decided to make curry chicken breasts and cauliflower. The curry chicken was actually all done for me, all I had to do was put it in a pan and fry it. Thanks Trader Joe's! Well any way, last Monday KBL 2 ORD,etc had posted a recipe for Brussel sprouts that sounded so delish (AND un-stinky!!) that I decided to try it on fresh cauliflower. So, following her instructions, I:
coated my cauliflower with olive oil (in a plastic bag) and
spread them out in a single layer on my baking sheet.
Then I just sprinkled them with Kosher salt and fresh ground black pepper.
Put them in the oven at 400degrees for 20 minutes and you would not believe how absolutely D, yes, capital Delicious these things were. Patrick and I scarfed them down and I put another batch in the oven! There were a few left over, and believe it or not I ate them cold the next day and and they were scrumptious too.

I have never fixed cauliflower like that. I think I'll try that sometime. It sounds good. Wonder if it would be good with Parmesan cheese on it???? Hmmmmm...

My favorite way to cauliflower. Yumm... I saw your pup icon on http://kbl2ord2san2luv.blogspot.com/ and had to stop by. We had a welsh and recently a lakeland terrier, both have crossed over the rainbow. Your sweet ones added a smile to my day.

Holy Guacamole! As in, I'd need a tub of guacamole for those chips. Awesome. I'm hungry just thinking of it. I love corn chips. Who am I kidding? I love ALL chips. Tee hee.
Ok, I am absolutely beyond FLATTERED that you liked my BS recipe enough to try it with cauliflower. Wahoo! I believe that most vegetables taste best when roasted or grilled. Mmmm. I make my CF the same way, and I almost used it for my "C" word but then decided that it was too similar to the BS recipe. About 5 minutes before pulling them out, I mix in chopped fresh parsley. When they're done I shave fresh parmesan on top and some more fresh ground black pepper. Soooo good!
