The Grand Finale ~ A to Z Foodies ~ The Letter Z

Zucchini is one of my favorite veggies. It is sooo versatile. It can be sliced into ribbons and used in a salad. It makes a nice creamy yellow soup. It's terrific in a stick for dipping. Zucchini nut bread is also a real treat. And zucchini can be made into a yummy dough. Here is a recipe I got from recipe trove:

Zucchini Dough

3 1/2 cups Zucchini; coarsely grated Salt; 1/3 cup Flour; 3 Eggs-lightly beaten; 2/3 cup Parmesan cheese-grated; 2 tbls. Fresh basil-(2 to 3 leaves) or 1 tsp. dried basil

Salt and pepper to taste. Place zucchini in bowl and lightly salt. Let sit for 15 minutes and squeeze out all the water that is rendered. Roll in a towel and twist again. This is to remove all possible water. Mix with rest of ingredients in a bowl. Spread on a well−oiled baking pan and bake in a 350F oven until top is dry and lightly browned (20 minutes).Remove from oven, add desired sauce, cheese, and toppings.Return to oven and bake at 350F until done, about another 20 minutes.

I want to thank dear Jen for hosting this fun food meme. I have thoroughly enjoyed learning about all the different foods, recipes and goofy folks who blogged with A - Z Foods!! Blessings to each and every one of you. I'll try to keep up with your blogs now that our journey is over.

A to Z Monday Food Stuff ~ The Letter Y

The Letter Y.

YOGURT.

I bet everyone is going to be using yogurt for the Y word, but if so, I'll just join the crowd then. I really do like yogurt. I like to eat it several times a week. While down in Phoenix I buy my favorite yogurt at Trader Joe's. The French Vanilla is just yummers. They also have the Greek yogurt. Up here in farrr N.Idaho I usually just stick to Activia. I like the Vanilla best in that too. Since it has warmed up here I always keep a few Activias in the freezer and eat it like ice cream. Then I give the container (with a bit still in it) to Baby Rocket Dog. She loves to finish it up! (Hootie isn't fond of yogurt.) If you click HERE it will take you to one of my old posts that gives a delicious recipe for a breakfast/yogurt dish that I got from Trader Joe's. (My photo at the top of this post shows the 4 ingredients used.)

A to Z Monday ~ The Letter T

The letter T could be so many things, but for me it is Tortellini with cheese filling. This is my last box, so I wish I could remember where I bought this stuff!! Ah well, I am thinking of improving my diet so I can loose about 30#, so I probably don't need to have all this yummy, carb filled food around. The lovely Miss Baby Rocket Dog pointed out that I also enjoy some Tazo tea on occasion. (Thanks Baby.) I remember a few years back when chai tea became the "in" thing to drink. Since I have a background in the Russian language I found it weird that the tea was called chai, since in Russian chai means tea. But I digress. A to Z Monday ~ Foodies Letter S

Not sure what happened, but somehow I lost a day and thought I had 2 Sundays in a row!! My entries for the letter S are Salad & Shallots. This salad photo I took in January. Pat and I eat a lot of salad...of course, we put too much dressing on this "diet food". ;>( Now shallots were new to me. I got a yummy recipe for shallots from watching Martha Stewart one day last March. I teamed the completed shallots with roasted pork loin and buttered basil pasta. Patrick declared it a success! Here is the recipe that I got from Martha Stewart.com :

Ingredients

Serves 4

10 large or 15 small shallots

1 teaspoon olive oil

1 teaspoon unsalted butter

1 teaspoon sugar

Salt and freshly ground pepper

Directions

1-Peel shallots and cut lengthwise into 1/8-inch slices. (I peeled, but did not cut into slices.)

2-Heat oil in a small saute pan over medium heat. Add the butter and shallots. Sprinkle with sugar and add salt and pepper to taste.

3-Cook shallots until they begin to brown evenly, then turn heat down to low and continue to cook until very soft, about 10 minutes. Serve at room temperature.

Sorry for posting this so late. Hope you all had a good Memorial Day. Patrick and I attended our town's parade and pulled weeds in the rain!! For more A to Z fun please visit Jen at http://www.unglazed.blogspot.com/.

A to Z Monday ~ Food related R words...

The Letter R
I don't eat pork, but I do fix it for my hubby. This is a pork loin roast getting ready to be placed in the oven. It was served with an S word, so next week I'll show the finished product on the plate...R & S side by side. Awwwwwww.
This is a bag of Bob's Red Mill Soy flour. (Once again the combination of R & S.) Don't ask me what I use this soy flour in please. I have no idea. Any suggestions??

A to Z Mondays Food Addition ~ The Letter Q

The Quintessential Q food. Yes, the letter Q food could only be one thing: Quesadilla!!
Such an easy dish to make, and yet so delish. It is so simple, that we used to make quesdadillas when we would go camping. Just a package of flour tortillas, some butter and grated cheese. We'd melt the butter on a skillet, then add the tortilla and sprinkle it with the cheese. Then flip. It was always a favorite on our camp outs. Sometimes we would go wild and add salsa and refried beans. Mmmmm good.
Please visit friend Jen for more A to Zsters! Hope you all have a lovely Monday.

A to Z Monday ~ The Letter O

The letter for this week is O. This was a really easy one for me, as one of my two favorite foods in the whole world is OATMEAL. Yes, the humble oat in the form of meal has been a favorite of mine since I was a little kiddo. After my surgeries as a child when I was finally taken off of a liquid diet and put on semi-soft foods my first two requests were oatmeal and Campbell's Bean with Bacon Soup. I love all kinds of oatmeal...but never slimy! Only in the past few years have I been introduced to John McCann's steel cut oatmeal and now it's my new favorite. I usually make up a bunch of it, then freeze some for an easy breakfast. I really like oatmeal. Heck, I even like that instant oatmeal in the bag (maple & brown sugar). Yum!
Another O that is popular at our house is olive oil. I use it for most of my cooking. I love the nutty flavor that it gives food. It's supposed to be good for us too, so that doesn't hurt any either!
Why don't you click here to get on over to Jen's blog to see other A - Z foodsters?! Have a happy Monday all!!

A to Z Monday ~ Food Fun With the Letters M & N

Manicotti. Cheese Manicotti. One of my favorite Italian dishes. There’s a place in Phoenix called Stumpy’s and they make the very best Cheese Manicotti. Oh yum, now I do miss a few things about Phoenix! I’m gonna use a “file photo” for this one.
And, M is also for Moon Stones Candy. I bought 3 jars of these silly things because I LIKE THE JARS they come in!! I think they are the perfect size for storing other small, dry foods. So, I figured they were on sale from $3.99 each down to $1.99 each so I couldn’t buy jars like that for so cheap. Anybody else ever do weird stuff like this??
Now for the letter N, I was about out of ideas, when I attended our local Earth Day/Arbor Day celebration on Saturday. My choice for the letter N is Natural! Natural everything, but in this case, Natural Brew Coffee Filters. And, that’s all I have to say about the letter N. :<) For more A to Z Monday foodies, go visit Jen’s sidebar. Hope you all have a good week. I’m guessing ours should go a bit better than the previous two!

A to Z Monday, Foodie Addition ~ The Letter K

Kung Pao Shrimp.
At the Super Dragon Chinese Restaurant in Phoenix.
2 words: Yum. Yum. Another favorite K word: KEURIG.
I love this handy-dandy little machine. Bought one for Patrick for Christmas up north and had to buy another for the condo! Pat can drink gallons of java, so still uses his regular coffee maker. For a quick, fresh cup every time though, this is the machine to use as far as I'm concerned. I have a specialty drink I make with the KEURIG each morning for myself. That's for next week's post. A to Z Monday ~ All About Food ~ The Letter J

JAM.
Not just any jam. Huckleberry Jam. Made by my dear friend Ilse and me! I either picked the berries myself in Idaho or bought them there (highest price $45 a gallon.) from 2004 through 2007. In 2006 Ilse had surgery on her hand and wrist so I did all the grunt work and she barked orders at me. No kidding. She's a real task master when it comes to making jam!! Everything is done to a T: From setting out the pure white clothes used to set the filled jars on, and for wiping the threads before putting on the lids to popping all the air bubbles on each filled jar with a tooth pick. And heaven forbid I not stir the bubbling pot fast enough. She told me I was "stirring like I was playing with it...Speed it up girl!!" I love that lady.

Ilse's getting a bit older and has pain in her legs so we haven't made any jam together the past few years. I made blackberry freezer jam in 2008. It was quite simple and surprisingly tasty, but nothing like Huck Jam. And in 2009 Patrick and I tackled Ilse's Huck Jam recipe together. We set everything up just the way Ilse taught me and it turned out great. You really need 2 people to make this kind of jam if you want it to be perfect. This year Patrick and I will make more Huck jam together. This stuff stays good for a very long time since we give it a boiling water bath, so I have saved a jar from each year...Kind of like a fine wine collection, to be broken out at the appropriate time. he he. Here's our recipe:

Ilse's Huck Jam

6 c. crushed huckleberries

1 package (2oz.) powdered pectin

8 c. sugar

Prepare 9 - 1/2 pint sized canning jars by washing in dish washer. It is important that these jars still be HOT when it is time to fill them, so timing is essential. Wash & drain berries. Put through food processor or whirl in a blender until berries are crushed. (NOT pulverized as it's nice to have a little thickness due to bits of berry!) Measure 6 cups of fruit into large (6 qt.) pot. Stir in the pectin and bring to a slow boil, stirring constantly. Add the 8 cups of sugar and continue to stir bringing mixture to a full, rolling boil. Let the fruit boil exactly 2 minutes. Remove from heat and skim off foam. (We like to eat the foam plain after it cools off.) Pour the jam into clean, warm jars to about 1/4 inch below rim. Pop as many air bubbles on the top of the filled jar as you can and wipe the rims with a clean cloth before sealing lids on tightly. We use rubber jar holders for turning lids tight. Place jars upside down on clean towel for 10 minutes. In the meantime follow the instructions for your canning pot so your water is boiling by the time the filled jars have rested 10 minutes. Set jars in boiling water bath so all are covered with water and then cover with pot lid. Let boil for 20 minutes. Remove jars. Gently wipe dry. Tighten lids again then set on clean towels covering your counter top. Now just sit back and listen for the gentle "plink" that each jar will make as it cools and it becomes vacuum sealed. What a lovely sound!

This recipe can be used with Blueberries, but if you do, be sure to add a squirt of lemon to the fruit or it will be too sweetsy. To clarify the difference between a true Huckleberry and a Blueberry here is what Answers.com has to say:

Huckleberry: A wild, blue-black berry that closely resembles (and is often mistaken for) the blueberry. The huckleberry, however, has 10 small, hard seeds in the center, whereas the blueberry has many seeds, so tiny and soft that they're barely noticeable. Additionally, the huckleberry has a thicker skin and a flavor that is slightly less sweet and more astringent. Unless you pick them yourself, or have a friend who does, it's unlikely that you'll find fresh huckleberries because they're not cultivated. They're in season from June through August and are good eaten plain or in baked goods such as muffins or pies.

A to Z Food Monday ~ The Letter I

I love icing! Just about any kind of icing. In fact, while looking through FotoSearch.com for icing pictures I was almost tempted to go into the kitchen and whip up a batch just to eat by the spoonful! (I did not.) When I was a kid I always used to say I was going to make an icing cake when I grew up and eat the whole thing myself. When I was a skinny little waif (until about 42yrs. of age) I actually did use to eat icing just plain. Those were the days my friends!!

I apologize for using stock photos 2 weeks in a row. My 83 year old Auntie was in town this weekend and Patrick and I were entertaining her. I'll post photos from our visit to the Phoenix Zoo soon. Here's hoping you all get to eat some icing from the top of a cake or from between an Oreo cookie this week! Now I'm heading over to Jen's to see what all the other A to Z-bees are up to. A to Z Monday ~ The Letter H

I Hate Honeydew (& cantaloupe) melon. The smell reminds me of the ether they used for my surgeries as a child!
Since I don't have any great H food photos for this week,

here is my pathetic attempt at H poetry

Haddock & Halibut are two yummy fishes.

Heavy cream on Huckleberries another of my fave dishes.

Horseradish is lovely on sandwiches or eggs.

I love nothing better than Huge King Crab legs!!

I'll stay away from Haggis, Ham, Honeydews and Horse.

Not one of those H's tempt me as first course.

And though I love Norwegians their Herring leaves me cold.

I could go without those fishies 'til I grow verrrry old.

But bring on the Halva, seeds with Honey as binder.

To eat this confection I need no reminder!

And Hummus is awesome when dipped with a pita.

Who'd have guessed that chickpeas would have ME as an eatta!

I've run out of H words that tickle my fancy.

So get over to Jen's blog ~ Yes, git now! Go Nancy!!

A to Z Monday ~ The Edible Letter G

Garlic on our dining room table.

My kitchen window at the cabin. This composition titled: Garlina, Rose and Trout.

I also use garlic powder in my cooking. Trader Joe's California is my favorite.

The only garlic left in our house right now. Partially used...of course!

The letter G could only be represented by one thing for me: GARLIC!!!

We L-O-V-E garlic at our house. Just about anything that can have garlic in it, does. At our farmer's market towards the end of the summer we can get the most wonderful part of the garlic plant, the bulbil. Bulbils are these yummy tiny garlic bits (we call them nubins!) that we keep in a small bowl and are constantly munching on. Yup, we have lovely garlic breath most of the time. he he.

When we go to British Columbia we have to go to our garlic restaurant, The Outer Clove. In San Francisco it would have to be The Stinking Rose. We are just plain garlic aficionados. If I was at the cabin I'd take some more pictures of my garlic paraphernalia:a long garlic braid, a garlic trivet and a garlic bud vase. The second photo here has my dear little Garlina (in the lower left hand corner) whom I have taken from one home to another for well over 20 years. Since she is up in N.Idaho I can't take a picture to show you her 'backside' but from the back she just looks like a head of garlic. (I usually let her watch me cook!) Anyway, I don't think there is much that doesn't taste great with the stinking rose!

For more A to Z food posts, please visit our fun friend Jen HERE.

Have a wonderful week and like my friend, Dorothy, make sure to remember something to be thankful for each day. Blessings on the head to all who pass this way.

A - Z Monday ~ The Fantastic Food Letter F

This is a CUP of French Onion Soup that I had in December at Papa Byrd's Bistro in N. Idaho. I know I've said this before, but this place has amazing food. Everything fresh and homemade and as you can see---good size portions. Is it any wonder I have trouble loosing weight when I go home?? (Their signature soup, Butternut Squash Jalapeño is out of this world!) Here is the start of Mama Cassie's fajitas. First I julienne a green & red bell pepper and a whole onion. Then I lightly sauté them in olive oil and set aside, leaving any oil in my pan.
Next I brown (in this case I had baked the chicken strips previously) some chicken breast strips and add fajita sauce and stir. For my sauce I use Lowry's Fajita's spices and rather than just adding water to them I also add some vinegar and Worcestershire sauce. And, I mix it up at least a day ahead. This really gives an extra kick to the fajitas.
After the chicken is nicely coated I then reintroduce the veggies and get them nice and coated with sauce and brown up a bit more. Finally I add chopped tomatoes and stir for about a minute. It's that easy!
Now all that you have to do is serve with a plate of warm flour tortillas, sour cream and perhaps some fresh guacamole. Yum yum.
Some of you might have noticed that I have a table cloth under my frying pan. Yes, I always keep an old table cloth handy in my kitchen for when I have anything that might splatter. I HATE splattered oil and even worse, cleaning it up, so I take precautions to make clean up much easier. I also use a splatter screen to help prevent a mess. Another cleaning tip is to keep a vinegar soaked or soapy sponge close by and always clean up immediately when something spills or splatters. Your welcome.

love, Martha, er I mean Cassie
