A to Z Monday ~ Foodies Letter S

Not sure what happened, but somehow I lost a day and thought I had 2 Sundays in a row!! My entries for the letter S are Salad & Shallots. This salad photo I took in January. Pat and I eat a lot of salad...of course, we put too much dressing on this "diet food". ;>( Now shallots were new to me. I got a yummy recipe for shallots from watching Martha Stewart one day last March. I teamed the completed shallots with roasted pork loin and buttered basil pasta. Patrick declared it a success! Here is the recipe that I got from Martha Stewart.com :

Ingredients

Serves 4

10 large or 15 small shallots

1 teaspoon olive oil

1 teaspoon unsalted butter

1 teaspoon sugar

Salt and freshly ground pepper

Directions

1-Peel shallots and cut lengthwise into 1/8-inch slices. (I peeled, but did not cut into slices.)

2-Heat oil in a small saute pan over medium heat. Add the butter and shallots. Sprinkle with sugar and add salt and pepper to taste.

3-Cook shallots until they begin to brown evenly, then turn heat down to low and continue to cook until very soft, about 10 minutes. Serve at room temperature.

Sorry for posting this so late. Hope you all had a good Memorial Day. Patrick and I attended our town's parade and pulled weeds in the rain!! For more A to Z fun please visit Jen at http://www.unglazed.blogspot.com/.

love, Cassie

The recipe sounds delicious Cassie. I thought it was Sunday all day yesterday too! We had a lot of rain all weekend here in GA. Hope you have a great week.

Hi Cassie! I've never had shallots before. They look a little like onions in your picture. Have a good week! :D

Don't think I've ever bought shallots. We do grow and sometimes buy green onions. Eat a lot of them.

Hi Cassie, We love SALADS too--and George found a really good dressing (which is lower cal than some). It's Ken's brand and is named Vidalia Onion. SO GOOD...Try it if you can find it.

Thanks for the Shallot recipe... Sounds delicious!!!

Hope you two are having a good early Summer so far.
Hugs,
Betsy

I'm glad I am not the only one guilty of thinking I am being so great by choosing a salad to eat, then dousing it with dressing!

You are always worth the wait! Happy Monday to you, regardless of what day it really is.

I alway over dress my Salad too. :D after all, that's the best part.
